Make it: Tarte Tricolore

Red, white & bleu, the French way — a classic crème pâtissière tart, striped in strawberries and blueberries. Serves 8.
Ingredients:
1 sheet pâte sucrée, blind-baked & cooled · 2 cups whole milk · 1 vanilla bean · 4 egg yolks · ½ cup sugar · ¼ cup cornstarch · 2 tbsp butter · 1 pint strawberries, halved · 1 cup blueberries · apricot jam, warmed, for glaze.
Méthode: Whisk the yolks, sugar & cornstarch. Heat the milk with the vanilla, temper into the yolks, then cook to a thick crème. Off heat, stir in the butter and chill completely. Spread the crème into the shell and arrange the berries in three stripes — strawberries, a white band, then blueberries. Brush with the warmed glaze and serve cool.
